Cormorant 2020 Sauvignon Blanc, Martorana Family Vineyard, Dry Creek Valley

I find this wine, the 2019 Cormorant Sauvignon Blanc, to have aromas of white peach, pear, guava, honeysuckle, ginger, and a mineral note. The hazy appearance is from the solids we left in the wine to protect the aroma and the mouthfeel. The color is pale lemon and has a good intensity for a developing Sauvignon Blanc. The wine is a dry wine with strong acidity, light alcohol, medium body with a long finish on the palate.

We harvested two tons of Dry Creek Sauvignon Blanc in August of 2019. The vineyard owner does not use any product that is not certified organic. With three drums and a French oak barrel, we hold the wine in small containers for fermentation to keep the wine from getting too hot and protect the aromas after the fermentation has completed. After the wine finished fermentation, all we did was stir the barrels a few times to build the mouthfeel and add a small amount of Sulfur Dioxide to protect the wine. This wine was unfiltered and unfined. The alcohol is 12.8% for the 2019 vintages. This wine is a pure and natural representation of Sauvignon Blanc from Dry Creek Valley.
