Simple, straightforward, yet precise winemaking produces the best Sauvignon Blanc. The wine is pumped once as juice, then fermented and aged in a combination of stainless drums and a few French barrels. After native fermentation, the lees were stirred to build mouthfeel.

Only a small amount of sulfites, less than 35 parts per million, was added. No other winemaking products, fining, or filtration were used in the production of this wine.

The 2021 Martorana Vineyard Sauvignon Blanc benefited from nearly ideal growing conditions. The natural acidity is excellent, with a typical spring and early summer. The fruit was harvested just before the heatwave hit, allowing for optimal ripeness without drying out the grapes.
